Tarte Tatin

I made a tarte tatin today. I’ve been meaning to make one for years because they are always making them on MasterChef (though I don’t recall it ever being on bake off). Anyway the driver for this was that the last of the nice little red apples were ready and I didn’t want them to go to waste.

I used a skillet which R bought during one of his brief enthusiasm for cooking. It is a great thing for making tarte tatin because it is cast iron and goes straight from hob to oven.

So in case anyone is not familiar with the dish, I made caramel in the skillet by melting butter and sugar together, and put the quartered apples on top. I left them to cook for 10 minutes, then put a sheet of puff pastry (sorry, shop bought) over the top and popped it in the oven for 25 minutes at 180.

Then I turned it out. This is the scary bit, but it came out reasonably ok (I did cut a little bit off the photo where it did not come out cleanly).

Anyway, it was very tasty. I have saved the other half for J when he comes next week.
