Mega effort in my last few days

When I say “my last few days” – I don’t mean last days ever (or at least I hope not), but just last few days before Tuesday when I go into hospital. I’ll be back home on Thursday, but I’ll be off my feet in a wheelchair again for some indeterminate period of time, and I have had very limited time to preop.

Luckily I am all sorted out to manage my own personal needs, and I know how to get around the house and carry out basic functions better than I did last time. But back in March I had a whole month to get food prepared, and I had made over 100 portions of tasty, healthy food for the freezer by the date of my operation. This proved a godsend, because I hate supermarket processed food, and R doesn’t really have time to cook and clean the house as well as his full time job and his obligatory 2 hours a day looking at Tik-Tok. The last part is just a joke as R does a brilliant job; but it makes me feel so very guilty when he effectively has to do my work as well as his own.

This time I have only had a week’s notice before the new operation, and during that week I had to go into Glasgow 3 times for various medical appointments.

So I am going to give myself a big hand of applause as under these circumstances and with a sore foot, I have managed to make 60 portions of food. We have chili con carne, chickpea and cauliflower curry, fish casserole, ropa vieja (Columbian beef stew), pepper pot, vegetarian lasagne, chowder and dhal. We have steak and sausage pie, falafels, broccoli cheese and shepherds’ pie. Also pizzas (made from scratch with home made bread dough and home made tomato sauce – the cheese came from ASDA. We also have 24 assorted bread rolls, 2 loaves (sliced into portions for toast and sandwiches) and 6 naan breads.

The freezer is packed to the gills and the fridges are about empty of all the stuff I bought for this. With luck I will be back on my feet by the time we have consumed it all.

But who knows…
