Another nutritious meal
In my on-going campaign against processed food, this was our main meal today.
Cut two large peppers in half, drizzle with olive oil and cook in oven for 15 minutes or so. Fry an onion with some pine kernels, then add a tin of red kidney beans, olives and chilis to your taste. Sprinkle thickly with grated cheddar cheese (not some horrible vegan substitute because this is an unprocessed food recipe) and bake in oven. Make a tomato sauce with fried onions, fresh tomatoes (in this case heritage ones from Fynest Fish). Serve the peppers with the sauce spooned over the top and couscous flavoured with cumin on the side.
Not bad but perhaps a little bland.
I have taken running my healthy cooking ideas past Chat GPT every day to see what he (or she?) thinks of them. He thought this one was quite good – anyway no ultra processed ingredients in it.
